I know long title but it is the truth! If you ever want to be a Cookie Queen at your next gathering or to give as a gift these are the cookies to do it with. First of all, they are not common, I mean they are not the normal Chocolate Chip Cookie, second they are not “oatmeal-ie” I mean when you are eating, well with my experience of oatmeal cookies, there is definite oatmeal but with these not so much. And with this recipe a little goes a long way. I made these as Christmas gifts for coworkers so I doubled it and I forgot how much it makes. It made at least 7 dozen and I am a “big cookie” maker. So without further a due. (pictures at the bottom)
White Chocolate Chip Oatmeal Cookies
Ingredients:
1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats
2 cups white chocolate chips
Directions:
Preheat oven to 350 degrees F, lightly grease cookie sheet. In a large bowl cream the butter and sugars. Stir in the egg and vanilla. Sift together the flour, baking powder, baking soda and salt until blended, then add to wet mix a little at a time. Stir in the rolled oats and white chocolate chips. Drop by the tablespoon onto the prepared cookie sheet. Bake for 10-12 minutes.
